I got turned onto the Minimalist Baker lately and I’ve fully adopted their Blueberry Muffin Breakfast Cookies as my go-to in the mornings. I make them on Sundays and then we’re set for the week! Knowing whats in them makes me feel good about it being high quality fuel for training and it’s really easy on my stomach. Muffins + water + coffee and I’m dialed!

Since I made the original purchase of ingredients, the only things I have to buy more of are the blueberries. It makes roughly 24 cookies depending on how big you make them and takes maybe 30 minutes start to finish. Highly, highly recommend!
