Working in the corporate world, lunches have always been the hardest part of my diet to control, until recently when I decided to start committing to a little bit of meal prep.
Here’s what I do: 5 salads, loaded with all kinds of goodness are prepped each Sunday and stored away in equal size tupperware. Each one corresponds to a day of the week, so when I’m tempted to duck out for some pad thai at lunch, I’ve already got my meal covered!
- Dole salad kits (3)
- Shredded carrots (1 pack)
- Garbanzo beans (1 can)
- Feta cheese, crumbled (1 container)
- Tofu, toasted (1)
- Radishes, shaved (1 bundle)
- Light dressing (1 bottle, added only when ready to eat)
